How to Stuff a Chicken
First, wash the bird thoroughly, inside and out. Inspect the cavity
thoroughly, making sure there were no remnants left inside when the bird
was cleaned at the market or processing plant.

There are countless stuffing recipes to choose from. Once the ideal
recipe is selected, follow the instructions and spoon the mixture into
the tail cavity. Do not pack the stuffing tightly, to room for expansion
during the cooking process. Birds should not be stuffed more than three
hours prior to baking. Use a skewer to secure the skin across the cavity
or use string or lightweight twine to truss the bird as follows:
- Pull skin over the opening
- Turn the chicken breast side down
- Tie string around the wings
- Turn the chicken breast side up
- Pull twine over the legs
- Cross the twine under the chicken
- Tuck the tail into the cavity
- Tie the legs together
