Easy Baked Parmesan Chicken

This is a very simple recipe and does a very good job of giving you a nice change of pace. Additionally, if you are a low carb dieter, this will fit right into your diet. It’s only got 3 ingredients so preparation is quick. Once you put it all together you just put it in the oven and let it do its magic.

  • 2 to 3 pounds of boneless skinless chicken breasts rinsed in cold water (can do less if desired)
  • 1 stick (4 ounces) of melted butter (add more if needed)
  • 2 to 3 cups of parmesan cheese, grated – not shredded

NOTE: You may need more than 2 cups of parmesan cheese depending on the size of the pieces of chicken. Be sure to have plenty on hand because if you don’t have enough to completely cover all the pieces of chicken, the recipe will not be very good.

Preheat the oven to 325 degrees.

When you melt the better, it’s best to do it in a microwave. Make sure it is thoroughly melted. If you choose to melt it in a pan on the stove, be sure that you do not burn it or it will taste nasty. Put the melted butter in a bowl or contain big enough to hold a piece of chicken.

Also, put the grated parmesan cheese in a bowl or container large enough to hold a piece of chicken.

One at a time, dip each piece of chicken into the butter and make sure it is covered well. The roll it in the grated parmesan cheese and make sure it is completely coated. You can set it aside on a rack while you are doing the other pieces.

Place the pieces in a baking pan, preferable aluminum. Spray the bottom of the pan with a non-stick coating, or better yet, line the pan with aluminum foil and spray the foil with non-stick coating. This will make for much easier cleanup.

With the chicken in the pan, cover it loosely with aluminum foil and place in the preheated oven for 40 minutes. Remove the foil cover for the last 5 minutes.

Remove the chicken from the oven and make sure it is thoroughly cooked. You can do this by sticking a knife in one of the pieces about half way down. If the juices run clear, they should be done. If not, or if you cut into one and see blood, return them to the oven for another ten minutes covered with the foil.

A good recommendation is to serve the parmesan chicken with asparagus and a nice rice pilaf.
