Traditional Chicken Gravy

The following basic chicken gravy recipe is easy to prepare. Wine, marsala, fresh herbs, mushrooms or other ingredients can be added for extra flavor as desired.

To make gravy:

Ingredients:

  • Chicken stock – ¾ cup
  • All purpose flour or corn starch – 2 tablespoons
  • Butter or margarine – 2 tablespoons
  • Salt and pepper to taste

Preparation:

  1. Melt butter or margarine in a heavy skillet or shallow pan
  2. Add flour or cornstarch, stirring rapidly until smooth
  3. Slowly add stock, using a whisk to blend completely
  4. Stir in salt and pepper
  5. Serve in a small bowl or gravy boat

A variation on this recipe, which does not use butter or margarine:

  1. Separate ¼ cup of stock
  2. Add the flour or cornstarch, stirring until smooth
  3. Boil remaining stock
  4. Slowly add stock/flour mixture whisking constantly until smooth
  5. Add water if necessary to achieve desired consistency
  6. Add salt and pepper to taste
